Ingredients

  • Potatoes - 400 grams, peeled and cubed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Parsley - 2 tablespoons, chopped
  • Chickpea flour - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2 (dairy-free)
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. Boil the cubed potatoes in salted water for about 15-20 minutes, or until tender. Drain and let them cool slightly.
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until they are soft and translucent, about 5 minutes.
  3. In a large mixing bowl, combine the boiled potatoes, sautéed onion and garlic, chopped parsley, chickpea flour, salt, black pepper, and paprika. Mash everything together until well combined but still a bit chunky.
  4. Form the potato mixture into two burger patties.
  5. In the same skillet, add a little more olive oil, and cook the patties over medium heat for about 4-5 minutes on each side, or until golden brown and crispy.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, add the cooked potato patty, top with sliced tomato and avocado, and finally place the top half of the bun.
  7. Serve immediately and enjoy your X-Burguer de Batata!
