- Potatoes - 400 grams, peeled and cubed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Parsley - 2 tablespoons, chopped
- Chickpea flour - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Burger buns - 2 (dairy-free)
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- Boil the cubed potatoes in salted water for about 15-20 minutes, or until tender. Drain and let them cool slightly.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until they are soft and translucent, about 5 minutes.
- In a large mixing bowl, combine the boiled potatoes, sautéed onion and garlic, chopped parsley, chickpea flour, salt, black pepper, and paprika. Mash everything together until well combined but still a bit chunky.
- Form the potato mixture into two burger patties.
- In the same skillet, add a little more olive oil, and cook the patties over medium heat for about 4-5 minutes on each side, or until golden brown and crispy.
- To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, add the cooked potato patty, top with sliced tomato and avocado, and finally place the top half of the bun.
