Ingredients

  • Swiss chard - 200 grams
  • Cooked quinoa - 100 grams
  • Chickpeas (canned, drained) - 100 grams
  • Garlic - 2 cloves
  • Onion - 1 small
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Avocado - 1 small
  • Tomato - 1 medium
  • Lettuce leaves - 2

Steps

  1. Preheat the oven to 180°C (350°F) for toasting the burger buns.
  2. Rinse the Swiss chard, remove the stems, and chop the leaves into small pieces.
  3. In a skillet over medium heat, add olive oil. Once hot, add chopped onion and garlic, sautéing until translucent.
  4. Add the chopped Swiss chard to the skillet and cook for about 5 minutes until wilted. Remove from heat and let cool slightly.
  5. In a large bowl, combine cooked quinoa, chickpeas, sautéed Swiss chard mixture, ground cumin, paprika, salt, and black pepper. Mash the mixture with a fork or potato masher until well blended but still a bit chunky.
  6. In a small bowl, mix ground flaxseed with water and let sit for about 5 minutes to thicken. Add this mixture to the quinoa and chard mix, stirring until fully incorporated.
  7. Form the mixture into two patties of equal size.
  8. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden and firm.
  9. While the patties are cooking, cut the whole grain buns in half and toast them in the oven for about 5 minutes.
  10. Assemble the burgers by placing a patty on each bun, topping with slices of avocado, tomato, and a couple of lettuce leaves. Serve immediately.
