  • Avocado - 2 ripe, medium-sized
  • Chickpeas - 200 grams, cooked
  • Garlic - 2 cloves, minced
  • Red onion - 50 grams, finely chopped
  • Fresh cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Oats - 50 grams, ground into flour
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Pickles - 4 slices

Steps

  1. In a mixing bowl, mash the avocados until smooth. Add the cooked chickpeas, minced garlic, chopped red onion, chopped cilantro, lime juice, ground oats, cumin, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two burger patties.
  3. Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Cook the patties for about 5-7 minutes on each side until golden brown and heated through.
  4. While the patties are cooking, toast the whole grain burger buns in the remaining olive oil until lightly crispy.
  5. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the avocado patty, sliced tomatoes, and pickles. Top with the other half of the bun.
  6. Serve immediately with your favorite side.
