  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill or barbecue to medium-high heat.
  2. Wash and slice the zucchini, red bell pepper, yellow bell pepper, and eggplant into approximately 1 cm thick slices.
  3. In a large mixing bowl, combine the sliced vegetables with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
  4. Place the vegetables directly on the grill or use a grill basket for easier handling.
