- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill or barbecue to medium-high heat.
- Wash and slice the zucchini, red bell pepper, yellow bell pepper, and eggplant into approximately 1 cm thick slices.
- In a large mixing bowl, combine the sliced vegetables with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
- Place the vegetables directly on the grill or use a grill basket for easier handling.
