Ingredients

  • Young green jackfruit - 400g, drained and shredded
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Carrot - 1 medium, diced
  • Vegetable broth - 250ml
  • Coconut milk - 200ml
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the bell pepper, tomato, and carrot, cooking for another 5 minutes until softened.
  4. Add the shredded jackfruit to the pot, mixing well with the vegetables.
  5. Pour in the vegetable broth and coconut milk, then add paprika, cumin, black pepper, bay leaf, and salt.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 25 minutes, stirring occasionally.
  7. Remove the bay leaf and adjust seasoning as needed.
  8. Serve hot, garnished with fresh cilantro.
