- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Carrot - 1 medium, diced
- Vegetable broth - 250ml
- Coconut milk - 200ml
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Heat the coconut oil in a large pot over medium heat.
- Add the diced onion and garlic, sauté until the onion is translucent, about 3-4 minutes.
- Stir in the bell pepper, tomato, and carrot, cooking for another 5 minutes until softened.
- Add the shredded jackfruit to the pot, mixing well with the vegetables.
- Pour in the vegetable broth and coconut milk, then add paprika, cumin, black pepper, bay leaf, and salt.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 25 minutes, stirring occasionally.
- Remove the bay leaf and adjust seasoning as needed.
- Serve hot, garnished with fresh cilantro.
