- Water - 500 milliliters
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Chopped parsley - for garnish
Steps
- Rinse and drain the soaked black beans, then place them in a large pot with 500 milliliters of water. Bring to a boil, reduce heat, and simmer for about 30-40 minutes until the beans are tender.
- In a separate skillet, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5-7 minutes.
- Add the diced bell pepper and chopped tomato to the skillet, cooking for another 5 minutes until softened.
- Stir in the cumin, paprika, bay leaf, salt, and black pepper. Mix well and let cook for an additional 2-3 minutes.
- Once the beans are cooked, drain them (reserving some cooking liquid) and add them to the skillet with the sautéed vegetables. Mix everything together, adding reserved cooking liquid a little at a time until you reach your desired consistency.
- Simmer the mixture for an additional 10 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
- Remove the bay leaf, serve hot, and garnish with chopped parsley.
