Ingredients

  • Black beans - 200 grams (soaked overnight)
  • Water - 500 milliliters
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Chopped parsley - for garnish

Steps

  1. Rinse and drain the soaked black beans, then place them in a large pot with 500 milliliters of water. Bring to a boil, reduce heat, and simmer for about 30-40 minutes until the beans are tender.
  2. In a separate skillet, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5-7 minutes.
  3. Add the diced bell pepper and chopped tomato to the skillet, cooking for another 5 minutes until softened.
  4. Stir in the cumin, paprika, bay leaf, salt, and black pepper. Mix well and let cook for an additional 2-3 minutes.
  5. Once the beans are cooked, drain them (reserving some cooking liquid) and add them to the skillet with the sautéed vegetables. Mix everything together, adding reserved cooking liquid a little at a time until you reach your desired consistency.
  6. Simmer the mixture for an additional 10 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.
  7. Remove the bay leaf, serve hot, and garnish with chopped parsley.
