Ingredients

  • Aquafaba - 100 ml
  • Coconut milk - 100 ml
  • Coconut sugar - 75 g
  • Desiccated coconut - 50 g
  • Cornstarch - 25 g
  • Vanilla extract - 1 tsp
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the aquafaba and a pinch of salt. Whip the aquafaba using an electric mixer until it forms soft peaks (about 5-7 minutes).
  3. In a separate bowl, mix the coconut milk, coconut sugar, desiccated coconut, cornstarch, and vanilla extract until well combined.
  4. Gently fold the whipped aquafaba into the coconut mixture until fully incorporated, being careful not to deflate the aquafaba.
  5. Grease two small ramekins with a little coconut oil or spray. Pour the mixture evenly into the ramekins.
  6. Place the ramekins in a baking dish and add hot water to the baking dish, creating a water bath that goes halfway up the sides of the ramekins.
  7. Bake in the preheated oven for about 30 minutes or until the tops are set and slightly golden.
  8. Remove from the oven and let cool to room temperature, then refrigerate for at least 1 hour before serving.
  9. To serve, run a knife around the edges of the ramekins and invert onto plates. Enjoy!
