- Aquafaba - 100 ml
- Coconut milk - 100 ml
- Coconut sugar - 75 g
- Desiccated coconut - 50 g
- Cornstarch - 25 g
- Vanilla extract - 1 tsp
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the aquafaba and a pinch of salt. Whip the aquafaba using an electric mixer until it forms soft peaks (about 5-7 minutes).
- In a separate bowl, mix the coconut milk, coconut sugar, desiccated coconut, cornstarch, and vanilla extract until well combined.
- Gently fold the whipped aquafaba into the coconut mixture until fully incorporated, being careful not to deflate the aquafaba.
- Grease two small ramekins with a little coconut oil or spray. Pour the mixture evenly into the ramekins.
- Place the ramekins in a baking dish and add hot water to the baking dish, creating a water bath that goes halfway up the sides of the ramekins.
- Bake in the preheated oven for about 30 minutes or until the tops are set and slightly golden.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 1 hour before serving.
- To serve, run a knife around the edges of the ramekins and invert onto plates. Enjoy!
