  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon
  • Eggplant - 100g, diced
  • Zucchini - 100g, diced
  • Red bell pepper - 50g, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, olive oil, and salt to form a smooth dough. Knead for about 5 minutes until elastic, then cover and let it rest for 15 minutes.
  2. While the dough is resting, heat a tablespoon of olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until translucent.
  3. Add the diced eggplant, zucchini, and red bell pepper to the skillet. Sprinkle with cumin, paprika, and black pepper. Cook for about 10 minutes until the vegetables are tender. Stir in the chopped parsley and remove from heat.
  4. Roll out the rested dough on a floured surface to about 2-3 mm thick. Cut into circles using a round cutter or a glass.
  5. Place a tablespoon of the vegetable mixture in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  6. Heat vegetable oil in a deep pan over medium-high heat. Fry the filled pastries for about 3-4 minutes on each side or until golden brown.
  7. Remove the pastries and place them on paper towels to drain excess oil before serving.
