- Bell pepper (red or yellow) - 1, sliced
- Tomatoes - 2 medium, chopped
- Zucchini - 1 medium, sliced
- Carrot - 1 medium, sliced
- Cilantro - 1/4 cup, chopped
- Coconut milk - 400 ml (1 can)
- Vegetable broth - 200 ml
- Lime juice - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the coconut oil over medium heat.
- Add the diced red onion and minced garlic, sautéing until the onion is translucent.
- Stir in the sliced bell pepper, and cook for another 3-4 minutes until softened.
- Add the chopped tomatoes, zucchini, and carrot to the pot, stirring to combine.
- Pour in the coconut milk and vegetable broth, and bring the mixture to a gentle simmer.
- Season with thyme, paprika, salt, and black pepper, adjusting to taste.
- Let the stew simmer for about 15-20 minutes, stirring occasionally, until the vegetables are tender.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot over cooked rice, garnished with additional cilantro if desired.
