- Brown rice - 150 grams
- Water - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Zucchini - 1 medium, diced
- Turmeric powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear. Drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced red bell pepper, carrot, and zucchini. Cook for an additional 5-7 minutes until the vegetables begin to soften.
- Add the rinsed brown rice to the vegetable mixture, stirring well to combine.
- Pour in the water, and add the turmeric powder, smoked paprika, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the rice is cooked and the water is absorbed.
- In the last 5 minutes of cooking, add the green peas and stir gently to incorporate.
- Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and stir in the fresh cilantro before serving.
