Ingredients

  • Brown rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Zucchini - 1 medium, diced
  • Turmeric powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced red bell pepper, carrot, and zucchini. Cook for an additional 5-7 minutes until the vegetables begin to soften.
  4. Add the rinsed brown rice to the vegetable mixture, stirring well to combine.
  5. Pour in the water, and add the turmeric powder, smoked paprika, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the rice is cooked and the water is absorbed.
  7. In the last 5 minutes of cooking, add the green peas and stir gently to incorporate.
  8. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and stir in the fresh cilantro before serving.
