- Hominy corn - 200 grams
- Coconut milk - 400 ml
- Brown sugar - 50 grams
- Cinnamon stick - 1
- Clove - 2
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Toasted coconut flakes - 30 grams (for garnish)
- Chopped nuts (e.g., walnuts or almonds) - 30 grams (for garnish)
Steps
- Rinse the hominy corn under cold water and soak it in water for at least 4 hours or overnight.
- Drain the soaked hominy corn and place it in a pot with enough water to cover it. Bring it to a boil and then simmer for about 20 minutes or until tender.
- Once the hominy is cooked, drain it and return it to the pot. Add the coconut milk, brown sugar, cinnamon stick, clove, and salt.
- Cook over medium heat, stirring occasionally, for about 10 minutes until the mixture thickens slightly.
- Remove from heat and stir in the vanilla extract.
- Serve warm, topped with toasted coconut flakes and chopped nuts.
