Ingredients

  • Hominy corn - 200 grams
  • Coconut milk - 400 ml
  • Brown sugar - 50 grams
  • Cinnamon stick - 1
  • Clove - 2
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Toasted coconut flakes - 30 grams (for garnish)
  • Chopped nuts (e.g., walnuts or almonds) - 30 grams (for garnish)

Steps

  1. Rinse the hominy corn under cold water and soak it in water for at least 4 hours or overnight.
  2. Drain the soaked hominy corn and place it in a pot with enough water to cover it. Bring it to a boil and then simmer for about 20 minutes or until tender.
  3. Once the hominy is cooked, drain it and return it to the pot. Add the coconut milk, brown sugar, cinnamon stick, clove, and salt.
  4. Cook over medium heat, stirring occasionally, for about 10 minutes until the mixture thickens slightly.
  5. Remove from heat and stir in the vanilla extract.
  6. Serve warm, topped with toasted coconut flakes and chopped nuts.
