Steps
- In a saucepan, combine the coconut milk, agave syrup, coconut oil, and a pinch of salt. Heat over medium heat until it begins to simmer.
- Add the shredded coconut and vanilla extract into the saucepan, stirring continuously until the mixture thickens and pulls away from the sides, about 10-15 minutes.
- Remove the mixture from the heat and allow it to cool slightly, then refrigerate for about 10 minutes until it is easier to handle.
- Once cooled, use your hands to form small balls (about 2.5 cm in diameter) from the mixture.
- Roll each ball in shredded coconut to coat evenly.
- Place the coated beijinhos on a plate and refrigerate for another 10 minutes before serving.
