Ingredients

  • Brown rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Tomato - 1 large, diced
  • Vegetable broth - 400 ml
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - to taste
  • Fresh parsley - a handful, chopped

Steps

  1. Rinse the brown rice under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced red bell pepper, carrot, and zucchini. Cook for about 5 minutes until the vegetables begin to soften.
  5. Add the sliced mushrooms and diced tomato, cooking for another 3-4 minutes until the mushrooms release their moisture.
  6. Sprinkle in the smoked paprika, cumin, black pepper, and salt. Stir well to combine the spices with the vegetables.
  7. Add the rinsed brown rice to the pot, mixing it thoroughly with the vegetables.
  8. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for about 30 minutes, or until the rice is cooked and has absorbed the liquid.
  9. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  10. Fluff the rice with a fork, stir in the chopped parsley, and serve hot.
