Vegan Acarajé

Ingredients
- Black-eyed peas - 100g
- Water - 500ml (for soaking)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Palm oil - 100ml (for frying)
- Tomato - 1 medium, diced
- Bell pepper - 1/2, diced
- Vegan shrimp (or jackfruit) - 100g
- Coconut milk - 100ml
- Peanut butter - 1 tbsp
- Cilantro - a handful, chopped
Steps
- Soak the black-eyed peas in water for at least 4 hours or overnight.
- Drain and rinse the soaked peas, then blend them in a food processor with the onion, garlic, salt, and black pepper until smooth.
- Transfer the mixture to a bowl and let it rest for 30 minutes.
- In a pan, heat palm oil over medium heat for frying.
- Form the black-eyed pea mixture into small balls and carefully drop them into the hot oil. Fry until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.
- In another pan, heat a little oil and sauté the tomato, bell pepper, and vegan shrimp (or jackfruit) for about 5 minutes until softened.
- Add coconut milk and peanut butter to the pan, stirring until well combined. Cook for another 5 minutes, adding cilantro at the end.
- Serve the fried acarajé split in half, filled with the vegan shrimp and vatapá mixture.
