Vegan Acarajé

Ingredients

  • Black-eyed peas - 100g
  • Water - 500ml (for soaking)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Palm oil - 100ml (for frying)
  • Tomato - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Vegan shrimp (or jackfruit) - 100g
  • Coconut milk - 100ml
  • Peanut butter - 1 tbsp
  • Cilantro - a handful, chopped

Steps

  1. Soak the black-eyed peas in water for at least 4 hours or overnight.
  2. Drain and rinse the soaked peas, then blend them in a food processor with the onion, garlic, salt, and black pepper until smooth.
  3. Transfer the mixture to a bowl and let it rest for 30 minutes.
  4. In a pan, heat palm oil over medium heat for frying.
  5. Form the black-eyed pea mixture into small balls and carefully drop them into the hot oil. Fry until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.
  6. In another pan, heat a little oil and sauté the tomato, bell pepper, and vegan shrimp (or jackfruit) for about 5 minutes until softened.
  7. Add coconut milk and peanut butter to the pan, stirring until well combined. Cook for another 5 minutes, adding cilantro at the end.
  8. Serve the fried acarajé split in half, filled with the vegan shrimp and vatapá mixture.
