  • Cashews - 100 grams
  • Coconut milk - 200 ml
  • Mushrooms (shiitake or oyster) - 150 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper (red or yellow) - 1 medium, diced
  • Tomato - 1 medium, diced
  • Palm oil - 2 tablespoons
  • Chopped fresh cilantro - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cooked rice - for serving

Steps

  1. Soak the cashews in water for at least 2 hours or overnight, then drain and rinse.
  2. In a blender, combine the soaked cashews and coconut milk. Blend until smooth and creamy.
  3. In a large skillet, heat the palm oil over medium heat. Add the diced onion, garlic, and ginger, sautéing until the onion is translucent.
  4. Add the chopped mushrooms and bell pepper to the skillet. Cook for about 5 minutes, stirring occasionally until the mushrooms are softened.
  5. Stir in the diced tomato and cook for another 3 minutes until it breaks down.
  6. Pour the cashew and coconut milk mixture into the skillet. Stir well to combine and let it simmer for 10 minutes, allowing the flavors to meld together.
  7. Add the chopped cilantro, lime juice, salt, and black pepper to taste. Cook for an additional 2 minutes.
  8. Serve the Vatapá Vegano hot over cooked rice.
