- Coconut milk - 200 ml
- Mushrooms (shiitake or oyster) - 150 grams, chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper (red or yellow) - 1 medium, diced
- Tomato - 1 medium, diced
- Palm oil - 2 tablespoons
- Chopped fresh cilantro - 2 tablespoons
- Lime juice - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cooked rice - for serving
Steps
- Soak the cashews in water for at least 2 hours or overnight, then drain and rinse.
- In a blender, combine the soaked cashews and coconut milk. Blend until smooth and creamy.
- In a large skillet, heat the palm oil over medium heat. Add the diced onion, garlic, and ginger, sautéing until the onion is translucent.
- Add the chopped mushrooms and bell pepper to the skillet. Cook for about 5 minutes, stirring occasionally until the mushrooms are softened.
- Stir in the diced tomato and cook for another 3 minutes until it breaks down.
- Pour the cashew and coconut milk mixture into the skillet. Stir well to combine and let it simmer for 10 minutes, allowing the flavors to meld together.
- Add the chopped cilantro, lime juice, salt, and black pepper to taste. Cook for an additional 2 minutes.
- Serve the Vatapá Vegano hot over cooked rice.
