Ingredients

  • Fish fillet (e.g., cod or tilapia) - 200 grams
  • Coconut milk - 200 ml
  • Dried shrimp - 30 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Palm oil (or more olive oil) - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, soak the dried shrimp in warm water for about 10 minutes, then drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger to the pan, cooking for an additional 2 minutes until fragrant.
  4. Stir in the soaked shrimp and cook for 3-4 minutes, allowing the flavors to meld.
  5. Add the coconut milk to the pan, followed by the fish fillet. Simmer gently for about 8-10 minutes, until the fish is cooked through.
  6. Incorporate the palm oil (or more olive oil), lime juice, chopped cilantro, salt, and black pepper into the mixture. Stir well to combine.
  7. Remove from heat and let it rest for a few minutes before serving.
