- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Bay leaves - 2
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced bell pepper and sliced carrots to the pot, cooking for an additional 5 minutes until they begin to soften.
- Stir in the shredded jackfruit, diced tomato, vegetable broth, coconut milk, bay leaves, paprika, cumin, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low and cover the pot. Let it simmer for about 25 minutes, stirring occasionally.
- Remove the bay leaves and check the seasoning, adjusting salt and pepper as necessary.
- Serve hot, garnished with fresh cilantro.
