- Chocolate cookies - 100 grams
- Unsalted butter - 50 grams, melted
- Sweetened condensed milk - 150 grams
- Heavy cream - 200 ml
- Egg yolk - 1 large
- Cocoa powder - 15 grams
- Gelatin powder - 5 grams
- Vanilla extract - 1 teaspoon
- Sugar - 30 grams
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the crushed chocolate cookies with the melted butter until well combined.
- Press the mixture into the bottom of a small, greased 6-inch (15 cm) round springform pan to form the base. Bake for 10 minutes, then remove from the oven and let cool.
- In a saucepan, combine the sweetened condensed milk, heavy cream, egg yolk, and vanilla extract. Stir over low heat until the mixture thickens slightly, about 5-7 minutes. Remove from heat.
- In a small bowl, dissolve the gelatin in 2 tablespoons of cold water and let it sit for 5 minutes. Then, heat it gently until it becomes liquid and stir it into the cream mixture.
- Pour the cream mixture over the cooled cookie base in the springform pan.
- Refrigerate for at least 2 hours or until set.
- Once set, dust the top with cocoa powder and serve chilled.
