Ingredients

  • Chocolate cookies - 100 grams
  • Unsalted butter - 50 grams, melted
  • Sweetened condensed milk - 150 grams
  • Heavy cream - 200 ml
  • Egg yolk - 1 large
  • Cocoa powder - 15 grams
  • Gelatin powder - 5 grams
  • Vanilla extract - 1 teaspoon
  • Sugar - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the crushed chocolate cookies with the melted butter until well combined.
  3. Press the mixture into the bottom of a small, greased 6-inch (15 cm) round springform pan to form the base. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a saucepan, combine the sweetened condensed milk, heavy cream, egg yolk, and vanilla extract. Stir over low heat until the mixture thickens slightly, about 5-7 minutes. Remove from heat.
  5. In a small bowl, dissolve the gelatin in 2 tablespoons of cold water and let it sit for 5 minutes. Then, heat it gently until it becomes liquid and stir it into the cream mixture.
  6. Pour the cream mixture over the cooled cookie base in the springform pan.
  7. Refrigerate for at least 2 hours or until set.
  8. Once set, dust the top with cocoa powder and serve chilled.
