- Ricotta cheese - 250 grams
- Eggs - 2 large
- All-purpose flour - 100 grams
- Milk - 100 ml
- Olive oil - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the ricotta cheese, eggs, and milk. Whisk until smooth.
- Add the olive oil, baking powder, salt, black pepper, and half of the grated Parmesan cheese to the ricotta mixture. Mix well.
- Gradually fold in the all-purpose flour until fully incorporated.
- Stir in the chopped parsley and mix until evenly distributed.
- Grease a 20 cm (8-inch) round baking dish with olive oil. Pour the ricotta mixture into the prepared dish and smooth the top.
- Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the torta to cool for a few minutes before slicing and serving.
