Ingredients

  • Ricotta cheese - 250 grams
  • Eggs - 2 large
  • All-purpose flour - 100 grams
  • Milk - 100 ml
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the ricotta cheese, eggs, and milk. Whisk until smooth.
  3. Add the olive oil, baking powder, salt, black pepper, and half of the grated Parmesan cheese to the ricotta mixture. Mix well.
  4. Gradually fold in the all-purpose flour until fully incorporated.
  5. Stir in the chopped parsley and mix until evenly distributed.
  6. Grease a 20 cm (8-inch) round baking dish with olive oil. Pour the ricotta mixture into the prepared dish and smooth the top.
  7. Sprinkle the remaining Parmesan cheese on top.
  8. Bake in the preheated oven for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Allow the torta to cool for a few minutes before slicing and serving.
