- Lime zest - 1 teaspoon
- Egg yolks - 2
- Heavy cream - 200 ml
- Powdered sugar - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Crush the digestive biscuits into fine crumbs and mix with the melted butter until well combined.
- Press the mixture into the bottom of a 20 cm tart pan to form the crust and bake for 10 minutes.
- In a bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, and egg yolks until smooth.
- Pour the lime mixture over the baked crust and return to the oven for an additional 15 minutes.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set.
