Ingredients

  • Digestive biscuits - 100 grams
  • Unsalted butter - 50 grams, melted
  • Sweetened condensed milk - 200 grams
  • Fresh lime juice - 60 ml
  • Lime zest - 1 teaspoon
  • Egg yolks - 2
  • Heavy cream - 200 ml
  • Powdered sugar - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits into fine crumbs and mix with the melted butter until well combined.
  3. Press the mixture into the bottom of a 20 cm tart pan to form the crust and bake for 10 minutes.
  4. In a bowl, whisk together the sweetened condensed milk, fresh lime juice, lime zest, and egg yolks until smooth.
  5. Pour the lime mixture over the baked crust and return to the oven for an additional 15 minutes.
  6. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set.
  7. In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
  8. Once the tart is set, top it with the whipped cream and garnish with lime slices or additional lime zest before serving.
