- Rice flour - 100 grams
- Nutritional yeast - 2 tablespoons
- Plant-based milk - 100 ml
- Lemon juice - 1 tablespoon
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Stir in the bell pepper and cook for an additional 3-4 minutes.
- Add the diced tomato, cooked chickpeas, cumin, black salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Remove from heat and mix in the chopped coriander, nutritional yeast, lemon juice, and plant-based milk.
- In a large mixing bowl, combine the rice flour with the chickpea mixture, stirring until well combined.
- Transfer the mixture to a greased pie dish and smooth the top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and firm.
- Remove from the oven and let cool for a few minutes before slicing.
- Serve warm, garnished with additional coriander if desired.
