  • Garlic - 2 cloves (minced)
  • Bell pepper - 1/2 (finely chopped)
  • Tomato - 1 medium (diced)
  • Coriander - 2 tablespoons (chopped)
  • Cumin - 1 teaspoon
  • Black salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Rice flour - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Plant-based milk - 100 ml
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
  3. Stir in the bell pepper and cook for an additional 3-4 minutes.
  4. Add the diced tomato, cooked chickpeas, cumin, black salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  5. Remove from heat and mix in the chopped coriander, nutritional yeast, lemon juice, and plant-based milk.
  6. In a large mixing bowl, combine the rice flour with the chickpea mixture, stirring until well combined.
  7. Transfer the mixture to a greased pie dish and smooth the top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and firm.
  9. Remove from the oven and let cool for a few minutes before slicing.
  10. Serve warm, garnished with additional coriander if desired.
