- Olive oil - 2 tablespoons
- Cornmeal - 150 grams
- Tapioca flour - 50 grams
- Eggs - 2 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced red bell pepper and shrimp to the skillet, cooking until the shrimp turn pink, about 5-7 minutes.
- Stir in the chopped cilantro, paprika, salt, black pepper, and lemon juice, then remove from heat and let it cool slightly.
- In a mixing bowl, combine the cornmeal, tapioca flour, eggs, and coconut milk to form a smooth batter.
- Fold the shrimp mixture into the batter until well combined.
- Pour the mixture into a greased tart or pie pan.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before slicing and serving.
