  • Shrimp - 300 grams, peeled and deveined

  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Cornmeal - 150 grams
  • Tapioca flour - 50 grams
  • Eggs - 2 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the diced red bell pepper and shrimp to the skillet, cooking until the shrimp turn pink, about 5-7 minutes.
  4. Stir in the chopped cilantro, paprika, salt, black pepper, and lemon juice, then remove from heat and let it cool slightly.
  5. In a mixing bowl, combine the cornmeal, tapioca flour, eggs, and coconut milk to form a smooth batter.
  6. Fold the shrimp mixture into the batter until well combined.
  7. Pour the mixture into a greased tart or pie pan.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
  9. Let it cool for a few minutes before slicing and serving.
