- Garlic - 2 cloves, minced
- Chickpea flour - 100 grams
- Nutritional yeast - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 150 ml
Steps
- Preheat the oven to 180°C (350°F).
- Peel and cube the sweet potatoes, then boil them in salted water for about 15 minutes or until tender.
- Drain the sweet potatoes and mash them in a large bowl until smooth.
- In a skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the sautéed onion and garlic to the mashed sweet potatoes and mix well.
- Stir in the chickpea flour, nutritional yeast, cumin, paprika, salt, black pepper, and fresh parsley until fully combined.
- Gradually add water to the mixture, stirring until you achieve a thick, yet pourable consistency.
- Grease a tart pan or pie dish with a little olive oil and pour the sweet potato mixture into it, spreading it evenly.
- Bake in the preheated oven for 30 minutes until the top is golden and slightly firm.
- Remove from the oven and let it cool slightly before slicing and serving.
