Ingredients

  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpea flour - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 150 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and cube the sweet potatoes, then boil them in salted water for about 15 minutes or until tender.
  3. Drain the sweet potatoes and mash them in a large bowl until smooth.
  4. In a skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
  5. Add the sautéed onion and garlic to the mashed sweet potatoes and mix well.
  6. Stir in the chickpea flour, nutritional yeast, cumin, paprika, salt, black pepper, and fresh parsley until fully combined.
  7. Gradually add water to the mixture, stirring until you achieve a thick, yet pourable consistency.
  8. Grease a tart pan or pie dish with a little olive oil and pour the sweet potato mixture into it, spreading it evenly.
  9. Bake in the preheated oven for 30 minutes until the top is golden and slightly firm.
  10. Remove from the oven and let it cool slightly before slicing and serving.
