Ingredients

  • Cassava (aipim) - 500 grams, peeled and grated
  • Coconut milk - 200 ml
  • Nutmeg - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped parsley - 2 tablespoons
  • Baking powder - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the grated cassava, coconut milk, nutmeg, garlic powder, onion powder, olive oil, salt, black pepper, and baking powder. Mix well until all ingredients are fully incorporated.
  3. Fold in the chopped parsley to add freshness to the mixture.
  4. Grease a small baking dish (about 20x20 cm) with a little olive oil and pour the cassava mixture into it, spreading it evenly.
  5. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the edges are slightly crispy.
  6. Once done, remove from the oven and let it cool for a few minutes before slicing. Serve warm.
