Steps
- Preheat the oven to 180°C (350°F).
- Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
- In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent.
- In a mixing bowl, beat the eggs and add the milk, mixing well.
- Stir in the grated zucchini, sautéed onion and garlic, flour, baking powder, grated Parmesan cheese, chopped parsley, salt, and black pepper until thoroughly combined.
