Ingredients

  • Zucchini - 300 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Eggs - 2 large
  • Milk - 100 ml
  • Olive oil - 2 tablespoons
  • All-purpose flour - 100 grams
  • Baking powder - 1 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
  3. In a large skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent.
  4. In a mixing bowl, beat the eggs and add the milk, mixing well.
  5. Stir in the grated zucchini, sautéed onion and garlic, flour, baking powder, grated Parmesan cheese, chopped parsley, salt, and black pepper until thoroughly combined.
  6. Pour the mixture into a greased pie dish and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
