- 2 large ripe tomatoes
- 200 grams ground beef or turkey
- 1 tablespoon olive oil
- 1 small onion - finely chopped
- 2 cloves garlic - minced
- 50 grams grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the tomatoes and scoop out the insides using a spoon, being careful not to break the skin.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
- Add the ground beef or turkey to the skillet, cooking until browned. Season with oregano, paprika, salt, and pepper.
- Remove the skillet from heat and mix in the grated Parmesan cheese until well combined.
- Stuff the hollowed tomatoes with the meat mixture, packing it down slightly.
- Place the stuffed tomatoes in a baking dish and bake in the preheated oven for 20-25 minutes, until the tomatoes are tender.
- Garnish with fresh parsley before serving.
