Ingredients

  • 2 large ripe tomatoes
  • 200 grams ground beef or turkey
  • 1 tablespoon olive oil
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 50 grams grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and scoop out the insides using a spoon, being careful not to break the skin.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
  4. Add the ground beef or turkey to the skillet, cooking until browned. Season with oregano, paprika, salt, and pepper.
  5. Remove the skillet from heat and mix in the grated Parmesan cheese until well combined.
  6. Stuff the hollowed tomatoes with the meat mixture, packing it down slightly.
  7. Place the stuffed tomatoes in a baking dish and bake in the preheated oven for 20-25 minutes, until the tomatoes are tender.
  8. Garnish with fresh parsley before serving.
