  • Cherry tomatoes - 100 grams, halved

  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, mix the tapioca flour and water until you have a smooth batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little olive oil.
  3. Pour a ladleful of the tapioca batter into the skillet, spreading it evenly to form a thin crepe.
  4. Cook for about 2-3 minutes until the edges lift, then add the chopped spinach, crumbled feta cheese, and halved cherry tomatoes on one half of the crepe.
  5. Season with salt and black pepper to taste, then fold the crepe over the filling.
  6. Cook for an additional 2-3 minutes until the filling is warm and the crepe is slightly golden.
  7. Repeat the process for the second serving.
