  • Grated coconut - 50 grams
  • Salt - a pinch
  • Butter - 10 grams (for greasing)
  • Vanilla extract - 1 teaspoon

Steps

  1. In a mixing bowl, combine the tapioca flour, coconut milk, sugar, grated coconut, salt, and vanilla extract. Mix well until smooth.
  2. Let the mixture rest for about 10 minutes to allow the tapioca flour to hydrate.
  3. Heat a non-stick frying pan over medium heat and lightly grease it with butter.
  4. Pour a ladleful of the tapioca mixture into the pan, spreading it evenly to form a thin pancake.
  5. Cook for about 2-3 minutes until the edges lift and the bottom is slightly golden.
  6. Carefully flip the tapioca pancake and cook for an additional 2 minutes on the other side.
  7. Repeat the process with the remaining mixture, adding more butter to the pan as needed.
  8. Serve warm, optionally dusted with powdered sugar or drizzled with more coconut milk.
