- Tapioca flour - 120 grams
- Water - 150 milliliters
- Salt - 1/4 teaspoon
- Grated cheese (e.g., mozzarella or queijo coalho) - 100 grams
- Butter or olive oil - 1 teaspoon
Steps
- In a bowl, mix the tapioca flour and salt together.
- Gradually add water to the flour while stirring until you achieve a slightly damp, sand-like consistency.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or olive oil.
- Scoop about 60 grams of the tapioca mixture into the skillet, spreading it evenly into a circle about 15 cm in diameter.
- Cook for about 1-2 minutes until the edges start to lift and the center looks set.
- Add half of the grated cheese on one half of the tapioca circle.
- Fold the other half over the cheese and cook for another 1-2 minutes until the cheese melts.
- Remove from the skillet and repeat the process with the remaining mixture and cheese to make the second tapioca.
- Serve warm and enjoy your Tapioca de Queijo!
