Ingredients

  • Tapioca flour - 120 grams
  • Water - 150 milliliters
  • Salt - 1/4 teaspoon
  • Grated cheese (e.g., mozzarella or queijo coalho) - 100 grams
  • Butter or olive oil - 1 teaspoon

Steps

  1. In a bowl, mix the tapioca flour and salt together.
  2. Gradually add water to the flour while stirring until you achieve a slightly damp, sand-like consistency.
  3. Heat a non-stick skillet over medium heat and lightly grease it with butter or olive oil.
  4. Scoop about 60 grams of the tapioca mixture into the skillet, spreading it evenly into a circle about 15 cm in diameter.
  5. Cook for about 1-2 minutes until the edges start to lift and the center looks set.
  6. Add half of the grated cheese on one half of the tapioca circle.
  7. Fold the other half over the cheese and cook for another 1-2 minutes until the cheese melts.
  8. Remove from the skillet and repeat the process with the remaining mixture and cheese to make the second tapioca.
  9. Serve warm and enjoy your Tapioca de Queijo!
