- Tapioca flour - 1 cup (120g)
- Water - 1/2 cup (120ml)
- Banana - 1 medium, sliced
- Mango - 1 medium, diced
- Shredded coconut - 2 tablespoons (30g)
- Agave syrup - 1 tablespoon (15ml)
- Pinch of salt - to taste
Steps
- In a mixing bowl, combine tapioca flour and a pinch of salt.
- Gradually add water, stirring until the mixture is smooth and resembles a thick batter.
- Heat a non-stick skillet over medium heat and lightly grease it with oil or cooking spray.
- Pour half of the tapioca mixture into the skillet, spreading it evenly to form a thin layer.
- Cook for about 2-3 minutes, or until the edges start to lift and the bottom is lightly golden.
- Flip the tapioca and cook for another 1-2 minutes on the other side.
- Remove from the skillet and place on a plate. Repeat with the remaining mixture to make a second tapioca.
- On one half of each tapioca, layer sliced banana, diced mango, and shredded coconut.
- Drizzle with agave syrup and fold the tapioca over to create a half-moon shape.
