Ingredients

  • Tapioca flour - 1 cup (120g)
  • Water - 1/2 cup (120ml)
  • Banana - 1 medium, sliced
  • Mango - 1 medium, diced
  • Shredded coconut - 2 tablespoons (30g)
  • Agave syrup - 1 tablespoon (15ml)
  • Pinch of salt - to taste

Steps

  1. In a mixing bowl, combine tapioca flour and a pinch of salt.
  2. Gradually add water, stirring until the mixture is smooth and resembles a thick batter.
  3. Heat a non-stick skillet over medium heat and lightly grease it with oil or cooking spray.
  4. Pour half of the tapioca mixture into the skillet, spreading it evenly to form a thin layer.
  5. Cook for about 2-3 minutes, or until the edges start to lift and the bottom is lightly golden.
  6. Flip the tapioca and cook for another 1-2 minutes on the other side.
  7. Remove from the skillet and place on a plate. Repeat with the remaining mixture to make a second tapioca.
  8. On one half of each tapioca, layer sliced banana, diced mango, and shredded coconut.
  9. Drizzle with agave syrup and fold the tapioca over to create a half-moon shape.
