Ingredients

  • Tapioca starch - 120 grams
  • Grated fresh coconut - 60 grams
  • Salt - 1/4 teaspoon
  • Water - 150 ml
  • Honey or maple syrup (optional) - to taste
  • Fresh fruit (for serving, optional) - as desired

Steps

  1. In a bowl, mix the tapioca starch and salt.
  2. Gradually add the water, stirring continuously until the mixture resembles a thick paste.
  3. Let the mixture rest for about 10 minutes to hydrate.
  4. Heat a non-stick skillet over medium heat and lightly grease it if necessary.
  5. Spoon about half of the tapioca mixture into the skillet, spreading it into a round shape about 1/2 cm thick.
  6. Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden.
  7. Sprinkle half of the grated coconut over one half of the tapioca.
  8. Fold the other half over the coconut to create a half-moon shape and cook for another minute.
  9. Repeat the process with the remaining tapioca mixture and coconut.
  10. Serve warm, drizzled with honey or maple syrup and fresh fruit if desired.
