Steps
- In a bowl, mix the tapioca starch and salt.
- Gradually add the water, stirring continuously until the mixture resembles a thick paste.
- Let the mixture rest for about 10 minutes to hydrate.
- Heat a non-stick skillet over medium heat and lightly grease it if necessary.
- Spoon about half of the tapioca mixture into the skillet, spreading it into a round shape about 1/2 cm thick.
- Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden.
- Sprinkle half of the grated coconut over one half of the tapioca.
- Fold the other half over the coconut to create a half-moon shape and cook for another minute.
- Repeat the process with the remaining tapioca mixture and coconut.
- Serve warm, drizzled with honey or maple syrup and fresh fruit if desired.
