- Tapioca flour - 100 grams
- Water - 250 ml
- Dried seaweed (nori or dulse) - 20 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a bowl, combine 100 grams of tapioca flour with 250 ml of water and mix well. Let it sit for about 10 minutes to hydrate.
- While the tapioca is hydrating, soak the dried seaweed in warm water for about 5 minutes until rehydrated, then chop it into small pieces.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped red onion and minced garlic, sautéing until fragrant and translucent.
- Add the halved cherry tomatoes and the chopped seaweed to the pan, stirring well. Season with salt and black pepper, and cook for an additional 5 minutes until the tomatoes soften.
- In a non-stick skillet, heat a small amount of oil over medium heat. Pour a ladleful of the tapioca mixture into the skillet, spreading it evenly to form a thin pancake. Cook for 2-3 minutes until the edges lift and the bottom is slightly golden.
- Flip the tapioca pancake and cook for another 2 minutes on the other side. Repeat with the remaining tapioca mixture.
- Once all pancakes are cooked, fill each with the seaweed and tomato mixture, drizzle with lemon juice, and fold them over.
- Serve warm, garnished with fresh parsley.
