Ingredients

  • Tapioca flour - 100 grams
  • Water - 250 ml
  • Dried seaweed (nori or dulse) - 20 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine 100 grams of tapioca flour with 250 ml of water and mix well. Let it sit for about 10 minutes to hydrate.
  2. While the tapioca is hydrating, soak the dried seaweed in warm water for about 5 minutes until rehydrated, then chop it into small pieces.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped red onion and minced garlic, sautéing until fragrant and translucent.
  4. Add the halved cherry tomatoes and the chopped seaweed to the pan, stirring well. Season with salt and black pepper, and cook for an additional 5 minutes until the tomatoes soften.
  5. In a non-stick skillet, heat a small amount of oil over medium heat. Pour a ladleful of the tapioca mixture into the skillet, spreading it evenly to form a thin pancake. Cook for 2-3 minutes until the edges lift and the bottom is slightly golden.
  6. Flip the tapioca pancake and cook for another 2 minutes on the other side. Repeat with the remaining tapioca mixture.
  7. Once all pancakes are cooked, fill each with the seaweed and tomato mixture, drizzle with lemon juice, and fold them over.
  8. Serve warm, garnished with fresh parsley.
