- tapioca flour - 150 grams
- water - 200 milliliters
- salt - 1/4 teaspoon
- olive oil - 1 tablespoon
- cheese (mozzarella or similar) - 100 grams
- fresh spinach - 50 grams
- tomato - 1 medium, sliced
- egg - 2 large
- black pepper - to taste
Steps
- In a bowl, mix the tapioca flour and salt together.
- Gradually add water to the flour, stirring until you have a smooth, lump-free batter.
- Let the batter rest for about 10 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with olive oil.
- Pour a ladleful of the batter into the skillet, swirling it to form a thin, even layer.
- Cook for about 2-3 minutes until the edges lift and the crepe is set, then flip and cook for another 1-2 minutes.
- Remove the crepe from the skillet and keep it warm. Repeat with the remaining batter.
- In the same skillet, add the fresh spinach and cook until wilted, about 1-2 minutes.
- Place some cheese, wilted spinach, and tomato slices on one half of each crepe.
- Crack an egg over the filling and sprinkle with black pepper.
- Fold the crepe over to enclose the filling and cook for an additional 2-3 minutes until the egg is cooked to your liking.
