Ingredients

  • Cheese (mozzarella or queijo coalho) - 100 grams, grated
  • Spinach - 50 grams, chopped (optional for savory filling)
  • Sugar - 1 tablespoon (for sweet filling, optional)
  • Coconut flakes - 30 grams (for sweet filling, optional)

Steps

  1. In a mixing bowl, combine the tapioca flour, water, and salt. Mix well until you have a smooth batter.
  2. Let the batter rest for about 10 minutes to allow the tapioca flour to hydrate.
  3. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  4. Pour about 1/2 cup of the batter into the skillet, swirling it around to form a thin layer.
  5. Cook for about 2-3 minutes until the edges start to lift and the center is set.
  6. Add your filling of choice (cheese and spinach for savory or sugar and coconut flakes for sweet) on one half of the crepe.
  7. Fold the crepe in half over the filling and cook for another minute until the cheese melts.
  8. Repeat the process with the remaining batter and fillings.
