Ingredients

  • Tapioca flour - 150 grams
  • Water - 200 ml
  • Salt - 1/4 teaspoon
  • Coconut oil - 1 tablespoon
  • Cooked and shredded chicken - 100 grams
  • Chopped spinach - 50 grams
  • Sliced avocado - 1/2
  • Chili flakes - 1/2 teaspoon
  • Black pepper - to taste

Steps

  1. In a bowl, mix the tapioca flour with water and salt until it forms a smooth batter.
  2. Heat a non-stick skillet over medium heat and add 1/2 tablespoon of coconut oil.
  3. Pour half of the tapioca batter into the skillet, spreading it evenly to form a thin pancake.
  4. Cook for about 2-3 minutes until the edges lift and the top appears set.
  5. Add half of the shredded chicken, chopped spinach, and sliced avocado onto one half of the tapioca pancake.
  6. Sprinkle chili flakes and black pepper over the filling.
  7. Fold the pancake in half to cover the filling and cook for another 1-2 minutes until heated through.
  8. Repeat the process with the remaining batter and filling.
