- Cooked and shredded chicken - 100 grams
- Chopped spinach - 50 grams
- Sliced avocado - 1/2
- Chili flakes - 1/2 teaspoon
- Black pepper - to taste
Steps
- In a bowl, mix the tapioca flour with water and salt until it forms a smooth batter.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of coconut oil.
- Pour half of the tapioca batter into the skillet, spreading it evenly to form a thin pancake.
- Cook for about 2-3 minutes until the edges lift and the top appears set.
- Add half of the shredded chicken, chopped spinach, and sliced avocado onto one half of the tapioca pancake.
- Sprinkle chili flakes and black pepper over the filling.
- Fold the pancake in half to cover the filling and cook for another 1-2 minutes until heated through.
- Repeat the process with the remaining batter and filling.
