  • Water - 150 ml
  • Salt - 1/2 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Butter - 1 tablespoon

Steps

  1. In a bowl, mix the tapioca flour, water, and salt until it forms a smooth batter without lumps.
  2. Let the batter rest for about 5 minutes to hydrate the flour.
  3. Heat a non-stick skillet over medium heat and add a small amount of butter, ensuring it coats the bottom of the skillet.
  4. Pour half of the tapioca batter into the skillet, spreading it evenly to form a thin pancake.
  5. Cook for about 2-3 minutes or until the edges start to lift and the bottom is lightly golden.
  6. Sprinkle half of the mozzarella and half of the Parmesan cheese over one half of the tapioca pancake.
