  • Tapioca flour - 100 grams
  • Fresh spinach - 150 grams
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the fresh spinach to the skillet, season with salt and black pepper, and cook until wilted, about 3-4 minutes. Remove from heat and stir in crumbled feta cheese.
  3. In a non-stick frying pan, heat a small amount of water over medium heat until it starts to simmer.
  4. Spread 50 grams of tapioca flour evenly in the pan to form a thin layer, allowing it to cook for about 2 minutes until it becomes slightly translucent.
  5. Carefully flip the tapioca over and cook for an additional minute.
  6. Remove the tapioca from the pan and fill half of it with the spinach and feta mixture. Fold the other half over to create a half-moon shape.
  7. Repeat the process with the remaining tapioca flour and filling.
  8. Serve warm, garnished with additional feta cheese if desired.
