- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach to the skillet, season with salt and black pepper, and cook until wilted, about 3-4 minutes. Remove from heat and stir in crumbled feta cheese.
- In a non-stick frying pan, heat a small amount of water over medium heat until it starts to simmer.
- Spread 50 grams of tapioca flour evenly in the pan to form a thin layer, allowing it to cook for about 2 minutes until it becomes slightly translucent.
- Carefully flip the tapioca over and cook for an additional minute.
- Remove the tapioca from the pan and fill half of it with the spinach and feta mixture. Fold the other half over to create a half-moon shape.
- Repeat the process with the remaining tapioca flour and filling.
- Serve warm, garnished with additional feta cheese if desired.
