Steps

  1. In a mixing bowl, combine the tapioca flour, water, and salt, stirring until there are no lumps and the mixture has a smooth consistency.
  2. Heat a non-stick skillet over medium heat. Once hot, pour about 1/4 cup of the tapioca mixture into the skillet, swirling it to form a thin, even layer.
  3. Cook for about 2 minutes until the edges start to lift and the surface appears set. If desired, sprinkle coconut flakes over the top.
  4. Add your choice of filling (cheese for savory or honey/maple syrup for sweet) on one half of the tapioca pancake.
