Steps
- In a mixing bowl, combine the tapioca flour, water, and salt, stirring until there are no lumps and the mixture has a smooth consistency.
- Heat a non-stick skillet over medium heat. Once hot, pour about 1/4 cup of the tapioca mixture into the skillet, swirling it to form a thin, even layer.
- Cook for about 2 minutes until the edges start to lift and the surface appears set. If desired, sprinkle coconut flakes over the top.
- Add your choice of filling (cheese for savory or honey/maple syrup for sweet) on one half of the tapioca pancake.
- Fold the other half over the filling and cook for another minute until the cheese is melted or the syrup is warm.
- Remove from the skillet and repeat with the remaining batter. Serve warm.
