  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, sliced
  • Bell pepper - 1 medium, sliced

Steps

  1. In a bowl, combine lime juice, minced garlic, chopped cilantro, olive oil, salt, black pepper, and paprika to create a marinade.
  2. Place the tambaqui fillets in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  3. Preheat a grill or a non-stick skillet over medium-high heat.
  4. Once hot, add the marinated tambaqui fillets to the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks.
  5. In the last few minutes of cooking, add the cherry tomatoes, red onion, and bell pepper around the fish in the skillet or grill, allowing them to soften.
  6. Remove the fish and vegetables from the heat and serve immediately, garnished with additional cilantro if desired.
