- Lentil flour - 100g
- Eggs - 2 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cherry tomatoes - 200g, halved
- Spinach - 100g, fresh
- Parmesan cheese - 30g, grated
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, for garnish
Steps
- In a mixing bowl, combine lentil flour and eggs, and mix until a dough forms. Knead the dough for about 5 minutes, then let it rest for 10 minutes.
- Roll out the dough on a floured surface to about 1/4 inch thickness, then cut into thin strips to create the talharim pasta.
- Bring a pot of salted water to a boil, and cook the lentil pasta for 3-4 minutes until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until the onion is translucent.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
- Stir in the fresh spinach and cooked lentil pasta, and toss everything together for 2 minutes to combine. Season with salt and black pepper to taste.
- Serve the dish hot, topped with grated Parmesan cheese and garnished with fresh basil.
