Ingredients

  • Lentil flour - 100g
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 200g, halved
  • Spinach - 100g, fresh
  • Parmesan cheese - 30g, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, for garnish

Steps

  1. In a mixing bowl, combine lentil flour and eggs, and mix until a dough forms. Knead the dough for about 5 minutes, then let it rest for 10 minutes.
  2. Roll out the dough on a floured surface to about 1/4 inch thickness, then cut into thin strips to create the talharim pasta.
  3. Bring a pot of salted water to a boil, and cook the lentil pasta for 3-4 minutes until al dente. Drain and set aside.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until the onion is translucent.
  5. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
  6. Stir in the fresh spinach and cooked lentil pasta, and toss everything together for 2 minutes to combine. Season with salt and black pepper to taste.
  7. Serve the dish hot, topped with grated Parmesan cheese and garnished with fresh basil.
