Ingredients

  • Chickpea flour - 150 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Water - 75 milliliters
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the chickpea flour, egg, olive oil, salt, and water. Mix until a smooth dough forms.
  2. Cover the dough with a damp cloth and let it rest for 10 minutes.
  3. On a lightly floured surface, roll out the dough to about 2-3 mm thickness.
  4. Cut the rolled dough into thin strips to create the talharim (pasta).
  5. Bring a pot of salted water to a boil and cook the talharim for about 4-5 minutes until al dente. Drain and set aside.
  6. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  7. Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to soften.
  8. Add the spinach and cook until wilted, about 2 minutes.
  9. Toss the cooked talharim into the skillet with the vegetables, mixing well to combine. Season with black pepper and additional salt if needed.
  10. Serve hot, topped with grated Parmesan cheese.
