- Chickpea flour - 150 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Water - 75 milliliters
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Black pepper - to taste
Steps
- In a mixing bowl, combine the chickpea flour, egg, olive oil, salt, and water. Mix until a smooth dough forms.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- On a lightly floured surface, roll out the dough to about 2-3 mm thickness.
- Cut the rolled dough into thin strips to create the talharim (pasta).
- Bring a pot of salted water to a boil and cook the talharim for about 4-5 minutes until al dente. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they begin to soften.
- Add the spinach and cook until wilted, about 2 minutes.
- Toss the cooked talharim into the skillet with the vegetables, mixing well to combine. Season with black pepper and additional salt if needed.
- Serve hot, topped with grated Parmesan cheese.
