Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles) and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp and scallops to the skillet. Cook for 3-4 minutes, stirring occasionally, until the shrimp turns pink and the scallops are opaque.
- Pour in the heavy cream and bring to a gentle simmer, allowing it to thicken slightly for about 2-3 minutes.
- Stir in the grated Parmesan cheese until melted and creamy. Season with salt, black pepper, and lemon juice to taste.
- Add the spiralized zucchini to the skillet, tossing gently to coat the zoodles in the creamy seafood sauce. Cook for an additional 2-3 minutes until the zucchini is heated through but still slightly firm.
