  • Fresh spinach - 200 grams
  • Almond flour - 100 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (optional, for serving) - 20 grams

Steps

  1. Blanch the fresh spinach in boiling water for 2 minutes, then drain and cool under cold water. Squeeze out excess water and chop finely.
  2. In a mixing bowl, combine the chopped spinach, almond flour, eggs, salt, and black pepper. Mix until a dough forms.
  3. On a clean surface, roll out the dough to about 1/4 inch thick. Cut into thin strips to form noodles.
  4. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the spinach noodles to the pan and toss gently to coat in the garlic oil. Cook for an additional 3-4 minutes until heated through.
  6. Serve immediately, garnished with optional Parmesan cheese if desired.
