- Carrots - 4 medium (about 500g)
- Avocado - 1 medium (about 200g)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150g, halved
- Spinach - 100g, fresh
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, for garnish
Steps
- Peel the carrots and use a spiralizer or a julienne peeler to create thin noodle-like strands. Set aside.
- In a blender or food processor, combine the avocado, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy, adding a little water if needed for consistency.
- In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes and sauté for about 3-4 minutes until they start to soften.
- Add the carrot noodles to the skillet and toss gently with the tomatoes for about 5 minutes until they are slightly tender but still firm.
- Stir in the fresh spinach and cook for another 2 minutes until wilted.
- Remove from heat and mix in the avocado sauce until well combined.
- Serve immediately, garnished with fresh basil.
