Ingredients

  • Carrots - 4 medium (about 500g)
  • Avocado - 1 medium (about 200g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150g, halved
  • Spinach - 100g, fresh
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, for garnish

Steps

  1. Peel the carrots and use a spiralizer or a julienne peeler to create thin noodle-like strands. Set aside.
  2. In a blender or food processor, combine the avocado, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy, adding a little water if needed for consistency.
  3. In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes and sauté for about 3-4 minutes until they start to soften.
  4. Add the carrot noodles to the skillet and toss gently with the tomatoes for about 5 minutes until they are slightly tender but still firm.
  5. Stir in the fresh spinach and cook for another 2 minutes until wilted.
  6. Remove from heat and mix in the avocado sauce until well combined.
  7. Serve immediately, garnished with fresh basil.
