- Zucchini - 2 medium-sized
- Broccoli florets - 200 grams
- Heavy cream - 120 ml
- Parmesan cheese - 50 grams, grated
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zucchini noodles and set aside.
- In a pot, bring salted water to a boil and add the broccoli florets. Blanch for 3 minutes until bright green and tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant but not browned.
- Add the blanched broccoli to the skillet and stir for another minute. Then, pour in the heavy cream and bring to a gentle simmer.
- Stir in the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Cook for 2-3 minutes until the sauce thickens slightly.
- Add the zucchini noodles to the skillet and toss gently to coat them in the creamy broccoli sauce. Cook for an additional 2-3 minutes until the noodles are heated through.
- Serve immediately, garnished with extra Parmesan if desired.
