Steps
- Peel the pumpkin and spiralize it into thin noodles using a spiralizer or a vegetable peeler.
- Heat the olive oil in a large skillet over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the cherry tomatoes and cook until they soften, about 3-5 minutes.
- Add the spiralized pumpkin to the skillet, season with salt and black pepper, and toss everything together.
- Cook for an additional 5-7 minutes, stirring occasionally, until the pumpkin is tender but still slightly al dente.
- Remove from heat and stir in the chopped basil and grated Parmesan cheese just before serving.
