  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel the pumpkin and spiralize it into thin noodles using a spiralizer or a vegetable peeler.
  2. Heat the olive oil in a large skillet over medium heat and add the chopped onion. Sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Stir in the cherry tomatoes and cook until they soften, about 3-5 minutes.
  5. Add the spiralized pumpkin to the skillet, season with salt and black pepper, and toss everything together.
  6. Cook for an additional 5-7 minutes, stirring occasionally, until the pumpkin is tender but still slightly al dente.
  7. Remove from heat and stir in the chopped basil and grated Parmesan cheese just before serving.
