- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Basil leaves - a handful, fresh, for garnish
Steps
- Bring a large pot of salted water to a boil and cook the talharim pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced zucchini, bell pepper, and carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Combine the cooked pasta with the sautéed vegetables in the skillet. Toss gently to mix well.
- Season with salt and black pepper to taste. If desired, sprinkle grated Parmesan cheese over the top and toss again.
- Serve hot, garnished with fresh basil leaves.
