Ingredients

  • Talharim (or fettuccine) - 200 grams
  • Zucchini - 2 medium-sized, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the talharim according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Add sliced zucchini to the skillet and cook for about 5-7 minutes until tender, stirring occasionally.
  5. Stir in the cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  7. Add the drained pasta to the skillet with the zucchini and tomatoes, and mix well.
  8. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  9. Season with salt, black pepper, and stir in the chopped basil and nutritional yeast if using.
  10. Serve immediately, garnished with extra basil if desired.
