- Talharim (or fettuccine) - 200 grams
- Zucchini - 2 medium-sized, sliced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a large pot of salted water to a boil and cook the talharim according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add sliced zucchini to the skillet and cook for about 5-7 minutes until tender, stirring occasionally.
- Stir in the cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the zucchini and tomatoes, and mix well.
- If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt, black pepper, and stir in the chopped basil and nutritional yeast if using.
- Serve immediately, garnished with extra basil if desired.
