Ingredients
- Sushi rice - 150 grams
- Water - 200 ml
- Rice vinegar - 30 ml
- Sugar - 10 grams
- Salt - 5 grams
- Fresh salmon fillet - 100 grams (sushi-grade)
- Cooked shrimp - 100 grams
- Mango - 1 ripe (about 200 grams)
- Avocado - 1 medium (about 150 grams)
- Coconut milk - 50 ml
- Lime juice - 10 ml
- Sesame seeds - 10 grams
- Nori sheets - 2 sheets
- Fresh cilantro - 10 grams
Steps
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a pot with 200 ml of water, bringing it to a boil, then covering and simmering for 18-20 minutes until tender. Remove from heat and let it sit covered for 10 minutes.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, fold this mixture into the rice gently with a wooden spoon. Allow the rice to cool to room temperature.
- While the rice cools, prepare the fillings: dice the salmon, cooked shrimp, mango, and avocado into small pieces. Set aside.
- In a small bowl, mix the coconut milk with lime juice for a refreshing sauce.
- To assemble the sushi, place a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking and take a small handful of sushi rice, spreading it evenly over the nori, leaving about 2 cm at the top edge.
- Place a line of diced salmon, shrimp, mango, and avocado along the center of the rice. Sprinkle with sesame seeds and fresh cilantro.
- Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.
- Repeat with the second nori sheet and remaining ingredients. Serve the sushi rolls with the coconut-lime sauce on the side.
