  • Milk - 200 ml
  • Unsalted Butter - 30 g
  • All-purpose Flour - 30 g
  • Eggs - 3 large (separated)
  • Grated Parmesan Cheese - 50 g
  • Grated Mozzarella Cheese - 50 g
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
  2. In a saucepan, melt the butter over medium heat, then whisk in the flour until smooth, cooking for about 1 minute to form a roux.
  3. Gradually add the milk while whisking continuously until the mixture thickens and is smooth. Remove from heat.
  4. In a bowl, beat the egg yolks and then add the cheese, salt, pepper, and nutmeg to the thickened mixture. Mix well.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the cheese mixture in three parts, being careful not to deflate the mixture.
  7. Pour the soufflé mixture into the prepared ramekins, filling them about 3/4 full.
  8. Bake in the preheated oven for about 25-30 minutes, or until the soufflés are puffed and golden on top.
  9. Serve immediately for the best fluffy texture.
