- Milk - 200 ml
- Unsalted Butter - 30 g
- All-purpose Flour - 30 g
- Eggs - 3 large (separated)
- Grated Parmesan Cheese - 50 g
- Grated Mozzarella Cheese - 50 g
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
- In a saucepan, melt the butter over medium heat, then whisk in the flour until smooth, cooking for about 1 minute to form a roux.
- Gradually add the milk while whisking continuously until the mixture thickens and is smooth. Remove from heat.
- In a bowl, beat the egg yolks and then add the cheese, salt, pepper, and nutmeg to the thickened mixture. Mix well.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the cheese mixture in three parts, being careful not to deflate the mixture.
- Pour the soufflé mixture into the prepared ramekins, filling them about 3/4 full.
- Bake in the preheated oven for about 25-30 minutes, or until the soufflés are puffed and golden on top.
- Serve immediately for the best fluffy texture.
